My cooking triumphs
I made a healty version of waffles from scratch at a family vacation--everyone loved them! I got lots of compliments. It was a glorious day. :)
My cooking tragedies
I got a beautiful new CuisineArt mixer for Christmas last year. I decided that I would make the most fabulous banana bread ever. Long story short, the mixer was on a high setting when I decided to switch positions of the mixing instrument to the bowl... and half the batter splattered EVERYWHERE. It was one of those moments when you just stare at the new development for a few minutes, ha ha. Luckily, no one saw my blunder and the bread turned out... edible.

Black Bean Brownies
Definitely will be making these again! Thank you for the recipe! I followed the other suggestions: rinse the beans & blend for a long long time, used more sugar, used the coffee. Next time I make it, I'll be stirring the chocolate chips into the dough so they don't fall off. Such a good rich-chocolate fix!

Sausage Spinach Manicotti
I only had soy meat on hand, and no spinach except Caribbean taro leaves. (So it was a Soy Taro Manicotti instead, haha.) I used cottage cheese for the protein, and I'm so pleased! I only had enough mixture for 7 manicotti shells, so I used just a little less water (1/2 cup) and it worked perfectly! The only thing I would've changed is adding cayenne pepper to the sauce to make it spicier. This was such an easy and amazing dish; I'll be making this often! Thank you so much!

Brazilian Cheese Bread (Pao de Queijo)
Loved it! The rubbery, chewey texture was the best part! Thank you for the recipe! I will try switching the ratios of water and oil next time.
