Roast Goose with Wild Rice Stuffing
I usually make "dressing" instead of "stuffing. I goose just renders too much fat. I roast the bird on a rack and stuff it with a couple of quartered apples. I discard the apples but they soak up a lot of goose grease. Turkey comes with my grandmother's cornbread/sage dressing. I do a wild rice dressing, in another dish, to go with goose.

Grilled Tuna Steaks with Dill Sauce
Sorry. It didn't do anything for me. I cut down the sugar in the sauce and it still was too sweet for me. All the ingredients seemed good; just didn't happen. And, yeah. Way too much sauce for two servings.

Tilapia Scampi
Really good and really easy. My fillets were too thin to flip, I guess. So after I pretty much destroyed one I let the rest cook unmolested. I'll use more lemon juice next time. I served with saffron rice and steamed vegetable medley.
