Lemon Garlic Salmon
Quick and easy to make, this recipe is a great one to pull out when you are tired, the company is hungry, and the salmon isn't going to have time to marinate. The lemon pepper gives it some flavor, but can't make up for the fact that there isn't enough taste or the "wow-ness" to the dish. There needs to be one more...something, whether it is adding a little white wine or something. Definitely not a dish for in-laws or formal company.

Scallop Blankets Appetizer
There are too many competing flavors in this appetizer. The sherry and bacon oil made the scallops taste a little on the sour side. Since I enjoy the simple freshness of grilled scallops, or even scallops sauted in garlic and butter, I found the various flavors unsatisfying. In fact, my husband also did not like the tastes and we ended up throwing out the appetizer. This is unfortunate, since it is easy to make and would be a beautiful appetizer.

Oven Fried Chicken III
This is definitely a "set it and forget it" recipe! The taste is excellent: it's suited for elegant dinners or casual potlucks. The meat is moist, and the cooking time doesn't even take 45 minutes. I made this recipe using three halved breasts with the bone still in, and believe that you can use other kinds of cuts to obtain yummy results.
