Tea Biscuits
A good recipe. I liked how it tasted (used butter instead of shortening) but I added raisins because I thought maybe it would be too bland without them... good thing I added the raisins, it's what made them 4stars (but it's still a good recipe!). I think next time (and I will make these again) I will use buttermilk to see how it turns out... and I will make the biscuits double the size so they don't look like miniature biscuits. (The recipe states that they make 20, and they do... but they are small)

Hot and Sour Chinese Eggplant
Amazing. My husband loves eggplant but complains that I never make it (because I didn't know how!) I used this recipe and WOW we both loved it. I added two cloves of garlic, an onion and some mushrooms. Instead of chili oil used red pepper flakes. I tripled the sauce recipe because of the added vegetables... (but I put less sugar than the amount called for one serving of sauce). You don't have to measure exactly with this recipe... this tasted so authentic I know I will be making it over and over again.

Pumpkin Cake III
The best pumpkin cake ever.. wow!! Like others, I did 1/2c oil + 3/4c applesauce, turned out AMAZING. I made this into a birthday cake with cream cheese icing.. it tasted like it was heaven sent - I'm not exagerating! Everyone loved it, even the people who don't normally eat cake went back for seconds. I will definitely be making this again!
