I live in Lac La Biche AB with my husband and 3.5 year old son. I'm a stay at home mom and I love cooking meals for people. My family is always greatful that I love to cook!
My favorite things to cook
Pasta is my love. I also love making risotto, especially when having guests over because they're always so impressed. I also use my slowcooker a lot and BBQ season is my favorite time of year! I'm a daring cook and love to try new things.
My favorite family cooking traditions
I absolutly LOVE my Mom's Thanksgiving dinner and look forward to it every year.
My cooking triumphs
I've got my son eating some very strange foods (for a 3 year old) and I'm pretty impressed with the recipes I try that he actually eats!
My cooking tragedies
One year my Mom put the Thanksgiving turkey in the oven and went out. I came over later on in the afternoon and thought it was weird that I couldn't smell the turkey. Well, it turns out that she forgot to turn the oven on!! We were excepting 20 people over for dinner!

Braised Balsamic Chicken
Everyone really liked this dish and complimented on how moist the chicken was. However, after trying it once the second time around I made a few adjustments. I found the rosemary totally overpowerd the other herbs (and I'm not really a huge fan of it) so I cut it in half. I put the oinions in raw because I don't like them too overcooked. And lastly, I added more balsamic (because I love it) and doubled the tomatoes so there was extra sauce which I used on rice. All in all, a very easy and yummy chicken dish!

Spring Risotto
I have made a lot of risottos before. I had intended on making a different one tonight but was missing an ingredient so I was glad when I found this one because I had almost everything on hand. I used red and yellow peppers just to give it more color. One thing I noticed is that the recipe doesn't tell you to heat the broth before adding it, although every other risotto recipe I've used calls for this step. Also, Arborio rice is better but it's expensive and sometimes hard to find. I find you can get away with using any kind of white rice. I even used Basmati rice tonight because that's all I had and it turns out just as good! I served it with lemon baked salmon and it was a big hit!

Chilly Dilly Carrots
Very, very yummy. I served them with baked salmon and they really complimented the fish. My 3 year old even ate them and he doesn't like ANYTHING!
