This has become a tradition! We have made it 2 years in a row now and given it as neighbor gifts for Christmas... this year I have had over half a dozen families ask if they were getting their jar of pear honey! It is FABULOUS!!! I do cook it on a lower setting for longer to keep it from scorching, and I ran my almost too ripe pears through a food mill (like applesauce) and it cut down on the cooking time some as well, but it is perfect otherwise!
