Nigerian Peanut Soup

This was delicious. I used a vegetable broth instead of chicken, natural peanut butter, and added 1 additional very hot pepper (Madame Jeanette) and it was wonderful. Will definately have it again!

Red Skinned Potato Salad

Absolutely delicious. It is perfect as it is, but I usually make it with half the amount of light mayo to cut the calories a bit and it still tastes great. Great recipe -- makes ordinary potato salad pale in comparison.
