Downeast Maine Pumpkin Bread

This recipe is EXCELLENT just as it is. The spices are perfect; very complementing to the flavor of the pumpkin without being overpowering. To those that feel the spice level is too low, remember this is a recipe for pumpkin bread, not spice cake, and thus should be recognized and appreciated as a great example of such.

Asian Salad

Excellent! I didn't have cabbage so I just used a bagged garden salad mix instead and that worked out perfectly. I microwaved the oil/sugar mixture for 1 1/2 minutes and allowed it to cool fully before adding the soy sauce and it thickened and emulsified perfectly using only a spoon to stir. For the noodle/almond/sesame seed topping, I did cut back on the butter, used about half, and it was outstanding. I didn't think that I would care for the sesame seeds much but decided to add them anyway as stated and found that they impart a wonderful rich nuttiness to the overall flavor. This topping would be great on other salads as well. Also, I added frozen grilled chicken strips (cooked in the microwave of course) to the salad to make it a meal. The whole family loved it. Artichoke, Cheese and Olive Antipasto

This was really good and an excellent offering to take camping as it holds well in the cooler and does get better upon sitting, even after four days. I put everything in a zip-lock bag and didn't even bother with turning/manipulating it. I just left it alone and everything seemed to marinate evenly. I did use white balsamic vinegar found at Trader Joe's so everything maintained their own lovely color. I added a chopped fuji apple for added crunch/texture as well as little cubes of calabrese (hot/spicy salami) and dried cranberries as suggested by another user to help balance the tang. To bump it up a notch, it tastes even better if you toast the baguette slices in a skillet with a little olive oil just prior to serving. This is a very adaptable and forgiving recipe that the whole family enjoyed, even the kids. Thank you for sharing it with us.

Easy Stovetop Peach Cobbler

An excellent idea that worked out perfect for cooking on a camp stove while camping. I agree with another member, if using canned peaches in heavy syrup omit the sugar as there is plenty in the cake mix to go around and balance the flavor. Also, I halved the amount of cinnamon called for and added about a 1/4 Tsp. of nutmeg and found that to be enough flavoring without overpowering the taste of the peaches. One more note, the famous cornbread people (you know the one in the small blue box) makes a cake mix also that comes in the right size so that you don't have to worry about halving a standard-sized box of cake mix. Overall, the family loved this recipe! It is definitely going into our permanent cooking file. Thank you for sharing this easy recipe with us.

Terrific Trail Mix

I find this recipe to be perfect in any combination and quantity of the listed ingredients so feel free to adjust it to suit your taste, needs, or to what you have on hand. Also, note that if the weather is on the warmer side, any candy type addition, even M & M's will melt from the moisture released from the dried fruit. Beets on the Grill

This was a good menu addition for vegetables to grill while camping. I did add a bit of sugar to the packs so that it would really caramelize with the butter and add a bit more to the kid appeal factor. Everyone enjoyed them. Thank you for sharing this recipe.

Taco in a Bag

An excellent and perfect meal to use while camping. We substituted ground turkey for the ground beef as we often do to lighten a meal. We also substituted a bottle of a famous chain restaurant's taco sauce for the salsa for easy portability and storage. The kids as well as adults loved it! Thanks for sharing this recipe.

Actually Delicious Turkey Burgers

This is a really good recipe that produces a very tender and flavorful burger. I found it helpful to form the patties on a freezer or waxed paper lined cookie sheet and chilling them well before cooking in order to make handling them easier and to help them stay together and maintain their shape better. Just as the title implies, these are actually delicious turkey burgers and the kids, ages 8, 10, 12, and 15, say they actually like them better than traditional beef burgers. I am really pleased as these are so much healthier and fit the bill too!

Rich Mexican Corn

My family thought this recipe was just okay and not worth the splurge in calories and fat as some treats definitely are. I only used four jalapeños including their seeds and it had just the right amount of heat. However, I will not be making this recipe again.

Pretzel Turtles

These have got to be the simplest treat ever to make and yet are SO VERY ADDICTIVE! Make sure that you make at least two batches... one to enjoy right away and another so that you'll have more for tomorrow or for that special event that they were originally intended for! I used the square grid-shaped pretzels with Rolos on top and to save time, I topped them with the pecan halves before placing them in the oven so that the pecans could toast slightly as the Rolos soften. After about 5 minutes in the oven, I just pressed down on each pecan which caused the Rolos to spread out perfectly over the square pretzel. They looked absolutely beautiful and presentable plus you can turn out hundreds of these quite fast. They just take a while to fully cool and set up but this can be remedied too by putting them in the refrigerator on an empty shelf to cool completely before storing them in plastic zip-top bags. These even taste great without the added nuts on top for those (especially kids) that don't quite appreciate nuts. Just flatten the heated Rolos with the back of a slightly oiled spoon to look like little kisses sitting on top. This will definitely be a staple for the holidays. Chicken and Spinach Alfredo Lasagna

This is an excellent recipe. To overcome the issue with the volume of spinach (I used 1 - 6oz. bag of fresh baby spinach leaves which worked out to be the perfect amount without overwhelming the dish... or kids ~ nice green speckles here and there), I added the spinach to the skillet of sauteed veggies at the last moment before turning off the heat to slightly wilt the spinach. This way all of the prepared ingredients fit perfectly into the 9" x 13" dish without the oozing that I've read about in other reviews. I also used a whole medium sized onion and the whole 5oz. package of sliced mushrooms from the produce dept. This worked out perfectly for flavor, not to mention nothing wasted. The mushroom slices (as opposed to chopped) made it a lot easier for my little mushroom hater to pick them out. Allow the dish to rest at least 15 minutes after removing it from the oven to allow it to settle for easier cutting and serving. The sauce would be great as a base for other pasta dishes too. I will definitely use this recipe again and again. Thanks for posting it!

Cream Cheese Frosting I

A really quick, simple, delicious, and forgiving glaze to spread over any bundt or snack cake (even while the cake is still warm). Measurements don't have to be exact plus you control the consistency/thickness of the end product by the amount of cream you add.

Best Chicken Salad Ever I

After adding additional celery & Miracle Whip and omitting the pecans, all at the suggestion of my children, and substituting dried cranberries for the raisins, , it was GREAT! The whole family loved it in pita pockets with lettuce. We also tried it on toasted hamburger buns with lettuce and it was just as good. I think the crunch of the pecans would add a nice texture but alas, the children's desires always rule. LOL

Migas II

Great starter recipe! I sauteed around 1/4 cup of chopped onions in butter until soft before adding the torn tortillas. It was very tasty. Even my children, who usually don't care for eggs, enjoyed this dish. Make sure that you allow the tortillas to crisp around the edges (you may need to add a bit more oil for this to happen) as it makes all the difference in the world in the end product.

Sugar Coated Pecans

This is an awesome recipe with the previously recommended amendments of the additional egg white plus vanilla. With these changes it is definitely a 5 star recipe. Everyone LOVES them, even those that are so so on nuts!

Pan De Sal II

Thanksgiving morning I realized that I didn't quite have the 6 cups of all purpose flour required for this recipe, so I substituted bread flour to make up the difference (@ 1 1/2 cups). These came out perfect. Everyone seemed to really enjoy them, especially slathered with butter. They were quite easy to prepare, yet made the holiday just that much more special. Although the prep time stated is 2 hours, you only actually handle the dough for @ 20 - 30 minutes. The remaining time the dough is rising. Not much time invested for an end result so good. You should definitely try this recipe!

Batter White Bread

If you want the taste of simple homemade white bread using ingredients and equipment that you probably have on hand already, this is it. My husband thought it was a bit yeasty tasting, but this was probably due to my following the 'quick rise in the oven with the pilot light on' tip. A slower rise outside of the oven should cure this problem. I thought it was pretty good taste wise and texturally, especially for the little effort and time required to make it.

Dave's Mocha Chicken

My husband and I found this dish to be just okay (edible). However, it is simple and kid friendly. Imagine teriyaki minus the grill or broiler, garlic, and ginger ~ unsophisticated. It’s true, you really don’t taste the coffee. However, the rather pronounced flavor of the sherry screams for lots of steamed rice and broccoli. Don’t be tempted to skip cooking the marinade on the side prior to adding it to the browned chicken. You must cook it separately in order to skim the surface. Once the marinade/sauce thickens, it does glaze the chicken for a beautiful presentation. However due to a lack of alluring flavors, this dish will not show up on my table again.

Five Minute Ice Cream

Pamela is a true GENIUS! This recipe is amazing and so satisfying. I used unsweetened frozen mixed berries for that is what I had on hand (I had to adjust the amount of sugar because the other berries in the mix tend to be a bit tart). I also added around 1/4 tsp. of vanilla to give it that berries and cream taste ~ Heavenly. A definite keeper in my recipe box. Thank you for sharing this with us :-D
