Easy Mexican Casserole
This is a different dish that add variety to my dinner menus. I think it was good but nothing really special. I used black beans instead of chilli beans. You can serve this with corn rice and avocado as side dish. I may make it again one day.

Eggplant Croquettes
This is a great way to eat eggplant. I suggest cutting the eggplant in small squares so it takes less time in the microwave, mine took to long to softened. I would only use 1/2 teaspoon salt because the cheese and crumbs already have sodium and it came a bit to salty.

Braised Celery
This side dish was easy to make and flavorful, the only thing I suggest is to completely omit the salt since the chicken broth already contain plenty of sodium. Mine came to salty because of that(and I used very little salt).
