I'm a busy working single mum to a teenager. I always prepare and cook fresh dinners every evening after work. I love to spend one day every two weeks baking and stocking up the freezer.

Carrot Pineapple Cake III
found this a lovely and easy cake to make. It was my first tome adding pineapple to a carrot cake, I was very impressed, my only alterations were I added hazlenuts instead of walnuts, also I added half a cup of pineapple and half a cup of cherries. I found this a bit too sweet for my taste but my son and mother adored it.

Tzatziki Sauce
I love this dip, I visited mainland greece last summer and lived on this dip. I made just a few changes I didn't peal the cucumbers I also used three table spoons of dill.I used one clove of fresh garlic and used 6 cloves of roasted garlic.
