Sturdy Whipped Cream Frosting
I don't understand why people call this "soupy" or "runny." It was perfectly firm for me following the recipe as written. I piped cupcakes using extra large tips (Ateco 808 and 828) and the icing held beautifully and was a great consistency for holding decorations (nonpareils, assorted sprinkles). It was also nicely balanced in both flavor and sweetness. This is an excellent recipe.

Easy Lemon Bars
These were very dense and chewy, kind of like fudge-style brownies. They had a fruit-loops taste.

Stove Top Tofu Chili
This is a quick and tasty way to cook up some (leftover) tofu. It is quite sweet, so I think next time I'll use Hot Rotel tomatoes instead of the stewed tomatoes to see if I can make it spicier (and probably reduce the added water by 1 cup). This time, I drained all the canned items and retained the original amount of water. I didn't have too much liquid in the final product; I simmered on high to cook off all the juices.
