Sicilian Ricotta Cheesecake
Really good and easy. It isn't as creamy as a cream cheese cake because it's NOT! I used lemon zest instead of orange zest also. It took almost 2 hours to bake but rose nicely. I would strongly recommend a marmalade glaze. Take about 2/3 c. of good marmalade and 2 tsp. lemon juice and boil for a couple of minutes. Pour warm glaze over cooled cake and chill. Beautiful and yummy.

Chocolate Plum Pudding Cake
I made this for a New Year's dinner party - it looked pretty made in a bundt pan , unmolded and dusted with powdered sugar. I also made a raspberry sauce and whipped cream to serve with it. This dessert is not very sweet - something I like but may disappoint some. You could compensate by making the raspberry sauce and/or the whipped cream sweeter than you normally would.

Corn Fritters Southern Style
Great recipe - we have tried many to try to imitate the corn fritters my husband's mom made - this is pretty much it! I have to admit we fried them in bacon fat - a nono for a vegetarian or the healthwise - but OH so good!I would also encourage the use of superfresh corn. Thanks for the recipe Helene!
