My husband and I get by the best we can. That means getting creative with basics and making things with what's on hand. We both love eating and I'm always looking for new inspiration when it comes to the kitchen.
My favorite things to cook
I love cooking comfort food, italian and hispanic. My favorite meals are definitely not low-cal.
My favorite family cooking traditions
Creating massive spreads of tastey food on the fly with my mom. She is an expert at throwing together last minute meals and making them taste amazing. Superbowl, World Series, Kentucky Derby..or just because. I love spending time with her in the kitchen. She just recently won the battle again breast cancer and I thank God every day that she is still alive.
My cooking triumphs
Probably anytime I make something from scratch. This may sound novice, but making my own condensed cream of chicken soup, BBQ sauce, or Jerk Chicken rub really excites me. I love the idea of being able to create anything I need from my pantry.
My cooking tragedies
When my husband and I were first dating, he had asked me to make chicken and dumplings. I never made it before, but I figured I could handle it just fine. I looked through a few recipes and took it on head first. I made a 12 quart pot of chicken and dumplings that tasted like paste. It was the most bland, disgusting waste of ingredients. My poor husband (boyfriend at the time) choked it down and said it was good. The next day he burned it on the stove while attempting to reheat it. Accident? I think not.
