About this Cook
Im not a great cook. My mother doesnt know how and i had no one to show me. So now Im trying things on my own and trying to get better, and learn more tricks and time savers. I have a very limited budget so i like recipes that are simple to do, and use ingredients i can usually find in my home already.
My favorite things to cook
chile verde, lasagnas, pasta dishes, shrimp dishes, simple things full of flavor.
My favorite family cooking traditions
haha... we dont really have any... other than the annual cookie baking marathon at christmas time.
My cooking triumphs
I can make some really awesome chili verde, zucchini cobbler, and from-scratch spaghetti sauce.
My cooking tragedies
I've failed miserably making chocolate chip cookies. They are my nemisis.

Potato Pizza Casserole
Delicious!! We couldn't find the cheese soup so instead we bought a box of velveeta mac n cheese and used the cheese sauce pouch. We also doubled up the sauce cause we like it saucy. Also, we cooked for 20-25 mins uncovered after removing the foil to make sure the potatos were cooked.

Zucchini Cobbler
My family has been making this for years at Christmas but I have one big change to make to this recipe - for those that say its not quite right and doesnt taste like apple or its too bitter--When cooking the zucchini with the lemon juice, also ADD 1/2 cup of BROWN SUGAR. This takes away the tart, adds sweetness and makes the zucchini more closely resemble apples. The kids in our family have been fooled by this dessert for years thinking it was apple. Hope that helps!
