Shrimp Red Thai Curry
I used chicken instead of shrimp, soy sauce in place of fish sauce, and green curry paste, which is a little hotter than red. It was delicious and very easy to make.

Cherry Pound Cake
I made this cake for Father's Day, and it tasted sooooo good! It was creamy and fluffly, and even though it's a little bit fattening......it is worth it!

Basil, Roasted Peppers and Monterey Jack Cornbread
I absolutely loved it--I substituted yoghurt for buttermilk and didn't have "fresh" basil, but I baked the cornbread in a giant cast iron skillet and it was terrific! My 10-year-old even ate it!
