Baked Potato Soup
Only made a few minor changes/substitutions because we didn't have all of the ingredients. First we cooked the onion & garlic in a little olive oil. We used a little less onion because I'm not an onion fan. I didn't cook it in bacon grease because all we had was Real Bacon (the kind that comes pre-cooked in a bag) & it doesn't make oil when we fry it. We had red potatoes, so we used 4 of them. We didn't have any half & half, so I used powdered milk mixed with water (less fatty). The soup came out great (not too runny). It is very forgiving, so you can alter the ingredients a bit & it still comes out very delicious. I almost always have to add extra salt or garlic powder or onion powder & I didn't with this recipe. It came out perfect.

Hearty Chicken Tortilla Soup
This is really delicious. We used frozen corn instead of the canned. You have to keep an eye on the tortilla strips. There's a fine line between perfectly done & burned, that you don't want to cross. I used a pizza cutter to cut them. The recipe was super easy and fast to make. It has a really great flavor.

Delicious Ham and Potato Soup
This is really good. I used 1/2 TBSP of celery seed instead of celery. I also added a mix bag of cauliflower & broccoli (cooked it most of the way in the microwave & then added it close to when the potatoes were done). I think I will add more ham next time. We will definitely be eating this again. EDIT: I cooked this again and used white pepper this time. I didn't realize white pepper was so flavorful. I really liked it, but think I would cut it down to 3/4 tsp next time. We did add some broccoli this time, but didn't need any onion powder or garlic powder, like we usually throw in to creamy soups. This is really good.
