Lentil Vegetable Soup
We loved this recipe. It was fast and very flavorful. We like a strong curry flavor so I added more curry powder. I also added a dollop pf yogurt when serving it rather than blending it in. I'm not a big mint fan and would skip it next time.

Bubba's Jambalaya
Great recipe! I tripled it and served it to a crowd. It was a huge hit. It fiilled an All Clad 12 Qt Casserole. Used brown rice so I added a bit more liquid. As the brown cooks for about 40 minutes, I added the meats after 20. Will make again and again.

Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles
This was ok but kind of one dimensional. I would use fresh garlic and ginger if I were to make this again. Too many veggies to actually stir fry at once. You really need to cook them in batches, otherwise, you're steaming them. The kids did like this, but really liked the incredibly sweet pasta most. I would also suggest adding fresh hot chilies instead of flakes. Siracha was a good addition for those who like it spicier.
