Hash Brown and Pork Chop Casserole
This is almost exactly like the Pork Chop Casserole I grew up with, only my mother used to cut up potatoes. The hash browns make this so much faster, and just as tasty!

Bean Quesadillas
I made this for dinner for just myself and loved it. I put the remaining bean mixture in the fridge and my husband didn't know it was for quesadillas so he just ate it by itself. He thought it was great =) It also made a great burrito filling.

Cheddar Artichoke Quiche Cups
This was so yummy! I think next time I might decrease the cheese a bit and add some spinach. But as the recipe is now, it was very good.
