Married, mother of two little girls. I am currently unemployed due to the economic crisis and enjoy spending time with my daughters and sharing meals with them and my husband. I love summertime and to be outdoors. I enjoy bicycling, walking, running, rollerblading and going to the park.
My favorite things to cook
Anything simple! My husband works mid-shift (2pm - 10pm) so during the majority of the day and night, I'm like a single mom and when dinner time rolls around, I need something simple to make without taking too much attention away from what the kiddo's are up to!
My favorite family cooking traditions
My Dad always cooked dinner, nothing too fancy but it was always good and I enjoy those memories :o)
My cooking triumphs
Still learning everyday so I feel that each meal that tastes good to my hubby is a triumph! He is an EXTREMELY picky eater and unfortunatley our menu choices are limited...sort of a "meat & potatoes" kind of guy.
My cooking tragedies
Uuuugghhh...pot roasts! I don't know what I do wrong! I try and try with all different sorts of methods and cuts of meat but they never seem to turn out right :o(

Chicken Pot Pie VIII
This was very delicious! I took the advice of a few others and boiled the chicken in 1/2 of the stock that it calls for (10minutes) then i added the potatoes & carrots & boiled another 5min. I made sure they were still firm but not raw. I prepared everything else the same with the only other exception of the onion, I never keep onion in our house due to the fact that my hubby hates it so i sprinkled in a tiny bit of dried onion and that worked just as well. I also followed the advise of a review on the egg white wash on the crust...turned out beautifully! This is another that will be in our meal rotation menu :o)

Angel's Old Fashioned Beef Stew
I agree with other reviews, this makes a good "base" but isn't exactly what I would consider enough to make a tasty stew. I took the advice of others and added a sprinkle of Worchestshire sauce. I made the mistake of adding too much of the water/flour thickener so it was a bit too thick but just added a bit of water to thin it. I really didn't care for the garlic powder. But, this is more if a personal choice, I rarely use it in any of my cooking. Next time I will use a bit of Garlic salt and then just season the rest with salt and pepper. I added the potatoes toward the end but it was still too much time and they were a bit mushy but not bad. Next time I will add toward the last 15-20 minutes of cooking. Overall, it was good but I gave it 3 stars for the blandness.

Prego(R) Now and Later Baked Ziti
Very good!! Made this for Sunday supper and hubby and 4yr old wolfed it down. Hubby even reheated leftovers the next day! I will definatley add this one to our menu rotation :o)
