Banana Crumb Muffins
These were quite good, but I had some problems with the crumb topping. I took the suggestion of adding the topping in the last 5 minutes of baking, but the muffins had raised so high that the topping just toppled off the muffin. In lieu of the crumb topping, I ended up topping the muffins with cinnamon sugar. Aside from that fiasco, they were a huge hit. I used 4 bananas, and added a bit of cinnamon to the batter. Next time I think I will add vanilla as well, maybe more cinnamon, and perhaps some more spice.
