Pumpkin Cheesecake in a Gingersnap Crust

YUMMY!!! I made this and it was a hit. I did have to cook mine 15 min longer and I didn't use the nuts in the crust. I would make this again. Thank you for the recipe.

Monster Cookies II

I love these cookies and so does everyone else that tries them. It does make a big batch. So when I do make them, I bake half of the recipe and freeze the other half for another time. They turned out wonderful!

Lower Fat Banana Bread II

This is a wonderful low fat recipe. I did use 1/3 cup sugar and 1/3 cup brown sugar. I also used 3 bananas instead of 2. It is very moist and has a great banana flavor. I made it for my husband and am hoping that he won't be able to tell that it is low fat. We shall see tonight.....

Chilled Strawberry Soup

This was a hit at a tea luncheon I had this past Saturday. I made it low fat and no one knew it. I doubled the berries, used fat free half and half instead of the milk and heavy cream and used low fat sourcream. I did use the sugar and I chopped some strawberries for the soup. I also garnished with strawberry slices on top.

Slow Cooker Chicken Taco Soup

This is a great recipe, low in fat and full of fiber. Yummy!!! It made alot and would be great when you have guests over for dinner. I did make a couple of changes based on previous reviews. I left out the onion because my family doesn't like it. I left out the beer and added 1 can of cream of chicken soup and 1/2 cup of chicken broth (both FF). I used lowfat sourcream and reduced fat mexican cheese and lowfat tortilla chips when serving the soup.

Cowboy Cookie Mix in a Jar

I LOVE this recipe. I used it for a fundraiser. Everyone loved it and came back for more. I did change a few ingredients....instead of choc. chips I used white choc. and instead of the nuts I used dried cranberries. Thank you for this recipe.

Mandarin Almond Salad

This is a great salad. I added more sugar to the dressing. The dressing was lacking something so I sweetened it up a little. I have also made this weight watchers friendly. I used a fat free sweet and sour dressing instead of the high fat dressing and I used the Go Lean Crunch cereal instead of the sugared almonds. You can only eat this salad the day you make it since the next day it gets soggy.

Apple Cake in a Jar

Cranberry Pork Roast

This pork turned out great. I substituted a can of cranberry sauce (with the berries in it) instead the the jelled. When served it looked great with the berries.
