These are delicious cookies!! Made them with my six yr old daughter last night and they came out beautifully perfect and oh so tasty!! I do not like walnuts so I used chopped almonds instead and is so yummy! I did not make a roll and refrigerate at all. Just mixed everything together and rolled into small balls and pressed with fork dipped in milk (my daughter had a blast doing that part!) and baked for about 8 min and they came out awesome and picture perfect! These were wonderful!! The only reason I didn't give 5 stars is because I believe, like others, that TRUE enchiladas should be made with corn tortillas instead of flour tortillas! My family loved these including my 6 yr old who is pretty picky!

Just made this for dinner this evening and it was a BIG hit!! Didn't have cream of mushroom soup so used only one I had which was cream of celery soup.....very tasty!! I think any cream soup would do fine. Kids and adults both gobbled it up! Very easy to make and very quick!!
