Asparagus Cashew Rice Pilaf
I took the others' advice about using less butter, broiling the asparagus, and toasting the cashews. Turned out pretty good. I'd prefer if the mix had more asparagus and less cashews, easily fixable next time I make it! Also probably would be good with a variety of other veggies (spinach, peas&carrots, etc)
