Chicken Wellington Casserole
We made a few alterations to the recipe--more onions and mushrooms, chopped up chicken, an 8-oz package of cream cheese, and matzo ball mix for the top because the grocer didn't have crescent rolls. It still turned out delicious--very creamy! We've nicknamed it Rabbi Wellington and will probably make it again in the future.

Picante Chicken
We made this using a jar of Newman's Own salsa, and it turned out fantastic! Simple and really flavourful. Next time, we'll try it in the crock pot.

Slow Cooker Chicken Stroganoff
This was easy and tasty. I skipped the Italian dressing mix and margarine and just put the cream of chicken soup in with the chicken, along with some chopped-up mushrooms. Turned out just great and made life rather easier on me!
