Holiday Chicken Salad
Great recipe! Didn't have any green onions or bell pepper but it came out delicious anyways. For a lower fat/calorie version, use fat-free mayo, cut pecans (you can use walnuts too) by half, and reduce cranberries to 1 cup. Still delicious. Would also recommend mincing the cooked chicken meat and adding a little more mayonnaise - makes for a more blended salad.

Cheesy Onion Focaccia
Wonderful easy recipe. Didn't have any bread flour so I used regular flour and it came out great. Would recommend a few alterations: 1 tablespoon butter (1/4 cup is way too much), and only one medium onion.

Spinach Brownies
Mmm....these are delicious and very easy to make, but they're soo greasy! Will probably use half the amount of butter next time I make them. Also, I found the flavor could use a kick, would recommend adding 1/4-1/2 cup shredded cheddar along with the mozzarella.
