Breakfast Pies
These are sooooo yummy! I will be making them a lot. I used a jumbo muffin pan and grands biscuits. I gently pulled the biscuits as flat as I could using my hands, then placed them in the muffin pan, pressing them against the sides until they reached the top of the well. Then I placed a couple of spoonfuls of sausage and onion in it, spooned in enough egg mixture to reach the top of the biscuit dough, then topped it with grated cheese. I baked them in my convection oven for 10 minutes and they turned out perfect! I can't wait to try them smothered in country gravy. Next time, I might try adding in a few shredded hashbrowns to the egg mixture.

Cream Cheese Corn
My daughter and I liked it, but my husband and son did not. I used canned corn though and they thought that they might like it better if I used frozen. So, I might try it again. It was a little thick, which was ok, but there was not a lot of flavor. I had to salt it. I tried the leftovers today though and like it better.

Glazed Carrots
I made this recipe with garden carrots so I am not sure if I used two pounds or not. It was really good, even my kids liked it. But, next time I think I will only use half the sauce because it was a little strong. I will be making it again though.
