Persimmon Bars
Changes I made: I used melted butter instead of oil. The bars were OK but somewhat more oily than tasty, to me. Also, the persimmon taste, even with an extra persimmon, was hardly evident. Friends liked the, but said they tasted like raisins and cinnamon. Not bad but not what I was hoping for.

Pumpkin Flax Quickbread
I thought this was excellent because it was very moist and pumpkin pie-ish. I added extra spices because I always do, along with walnuts, craisins, coconut, and chocolate chips and the result was delicious. Next time, I would omit the chips because it was so delicious on its own and the chocolate almost detracts from the wonderful pumpkin flavor. The coconut was a very nice tough though. Great recipe; thank you

Butternut and Acorn Squash Soup
Very good! Served this last night and got many compliments from guests. I used 4 ox. fat free cream cheese and added a leek and 3 cloves of garlic to the onion and butter-btw I only used 2 T of butter-it turned out great. ADDED a teaspoon or so of salt and cinnamon and that made a big difference. Just be willing to add spices to taste.
