Strawberry Roses

The directions for this are misleading; they should read 'gently mix together the cheese, powdered sugar, and vanilla'. Beating the cheese causes it to separate. Even thought I am an accomplished cook, mascarpone cheese is not easily found and so I have not ever used it.When I found this recipe I thought it would make a great topping for a lemon chiffon cake I was making for a party, and since I follow directions to the letter proceeded to BEAT the cheese...... so I ended up with $6 of cheese down the drain and a concoction that looked like ricotta! The flavor was good, but I thought a tad sweet so I would recommend cutting the sugar by 1/2 a cup. I ended up using this recipe but with cream cheese (and not as much sugar) and it turned out great for my cake.

Chocolate Cream Cheese Frosting

Only 4 stars since I altered the recipe to make it a mocha frosting by adding 1T of instant coffee to the chocolate and I also added heavy cream instead of the evaporated milk. Still wonderful in my dark choc cake as a filling.

Buttermilk Pancakes II

Don't try to make these with powdered buttermilk!!!!! My first attempt I tried the powdered buttermilk, the second I used the real deal. A 100% difference! Light, fluffy; everything a pancake should be. Yummy! Better than that famous box mix and as an added bonus; none of the preservatives!!

Creamy Vanilla Ice Cream

Wonderful!!! Made this over the Fourth of July weekend in a hand crank ice-cream maker. I adjusted the recipe to be 5 eggs, 2 1/2 c sugar, 1/2 t salt, 6 1/4 c whipping cream, 5 c 1/2&1/2, 1 T Vanilla, 1 vanilla bean. Adjustments I made to the recipe to lighten it up were to replace the whipping cream with the 1/2&1/2, and use 2% milk for the called for amount of half and half. I also reduced the sugar by a half cup, and cooked a vanilla bean with the custard to give the ice cream a boost. Very yummy stuff!

Layered Chicken and Black Bean Enchilada Casserole

Spinach and Rice (Spanakorizo)

Very good. I was concerned about the small amount of rice but in the end we had enough for the 6 of us. I served this with the greek meatballs on this site, and I added to lemon juce as suggested. I did not have the feta but used parmesan like others had suggested and it was really very good!

Fabulous Homemade Bread

Wonderful bread! I cheat and use my kitchenaid for the mixing, and I also replace some of the white flour with WW, and add things like flax seeds and sunflower seeds just to boost the nutritional content a bit. For me this recipe makes 4 loaves since I use the extra long loaf pans.

Zucchini Pineapple Bread II

A little on the sweet side, I will reduce the sugar next time. I made this with whole wheat flour instead of white and used half brown sugar and half white (probably why it was a little sweet). A very tasty way to get my kids to eat raisins!

Barbara's Golden Pound Cake

This was so yummy! I used it in my berry/lemon trifle. I also ended up with a LOT of cake; this recipe made 2 extra large loaf pans (about 4 regular loaf pans). I was able to freeze for later use, which will be an added bonus in the summertime when you do not want to run the oven so much.

Basic Microwave Risotto

Very easy and very good. I added some lemon pepper and some Mrs. Dash just to enhance the flavor. I also omitted the wine (I was out) and added a bit of brown rice since I was about four Tbl's short of a full cup which then required a bit more liquid and a little longer cooking time but the kids raved about this rice. A keeper in my book!

Chocolate Banana Cake

Very interesting flavor; I added the cup of bananas and then since the box needed a cup and a third of water, I added an additional 1/3 c water to the cake. It turned out very well, so I am going to guess that the moisture level of the cake depends on the amount of water the box recipe calls for. I also added 1/2 a pkg of dark choc chips and frosted it with my own concoction of a chocolate cream cheese frosting. Yummy!

Focaccia Bread

Awesome! Very easy to make, I throw everything into the bread machine on dough cycle and then bake it on my pizza stone. Kids love it! Reminds us of a local pizza shop's crusts- going to try that later this week!
