Cinnamon Hazelnut Biscotti

Great, easy to use recipe. I used pecans instead of hazlenut b/c I was short on time and didn't feel like shelling the nuts. This was my first time baking biscotti and it came out great!

All I could taste was cream cheese. There was hardly even a hint of raspberry. The brownies came out dry (maybe it was the biscuit mix?). Even though I greased the pan (with shortening) the brownies all stuck to the pan and crumbled. I salvaged everything and am going to turn it into a torte, but it was, for me, a waste of ingredients and time. Will not try again.

Balsamic-Glazed Salmon Fillets

This was pretty easy to make. I think I used too much mustard (I eyeball everything), but I liked how it thickened and stuck to the salmon. It was very simple and used ingredients I already have. Will try again!

Sangria Barcelona Style

This was incredibly easy, but too much sugery drinks for me. I used diet Polar Dry Orange soda (the best- but not found outside of New England), Sprite Zero and splenda. It came out great and was better the next day. Would make again with my less sugery substitutes.

Cool Whipped Frosting

So easy! I used fat free cool whip and fat free vanilla instant pudding and it still was SOO delicious. Melted quickly though, so keep refrigerated.

Maple Dill Carrots

Egg-Free Low-Fat Oatmeal Cookies

These make great breakfast treats on my way out the door! I added a bit more baking powder and vanilla, and substituted mixed dried fruit for just one kind. I make these every few weeks and grab a few on my way to work!

Chocolate Truffles

These were really rich. Too rich to enjoy them. I took the leftovers home from the office, melted them down with heavy whipping cream and stirred in crushed Thin Mint girl scout cookies. That was delicious. But this? I won't make it again...

Salmon with Pineapple Tomato Salsa

This was GREAT! I happened to have shallots lying around, but I wouldn't hesitate to use a yellow or green onion in it's place. I didn't have lime juice so I used half OJ and half lemon juice. I added extra brown sugar, cilantro and 2 green onions for extra zing. I will make this all the time. Thanks!

Easy Cajun Jambalaya

This was great. I halved the recipe (since there was just two of us) and used turkey kielbasa and a leftover (cooked) porkchop from the night before instead of chicken, and some tofu. I left out the celery (because I don't like it) and doubled the amount of bell pepper instead. I threw everything in the crock pot and added a can of chopped tomatoes with some of the liquid drained for 3.5 hours. Easy, spicy, delicious. Will make again! Thanks!

Banana Crumb Muffins

I took a previous reviewers suggestion to substitute yogurt for butter. I went a step futher and used Boston Creme light yogurt and added about one cup of chocolate chips. They are moist and delicious! I made one dozen with plenty of crumb topping left over. Will make again. Thanks!

Jo-Ann's Power Bars

I definately did something wrong. Mine didn't stick together! I did substitute brown sugar splenda, so that might have been why? I used Fiber One instead of Grape Nuts and yogurt covered raisins instead of dried fruit. It still came out DELICIOUS! I just put it in separate bags to take as trail mix. I will try it again without substitutions and hopefully they will make bars!

Sean's Falafel and Cucumber Sauce

Delicious! The only things I changed was adding some green onion (I only had half of a regular onion on hand), I didn't have any corriander so I used a Mrs. Dash spice blend that had corriander in it, and I baked them at 350 for about 20-25 minutes, flipping them occasionally until golden brown on both sides. They came out great! I didn't make the sauce because I don't like cucumber and didn't have yougurt. Will make again. UPDATE: I just had four of the patties (roughly 2-3 in in diameter) for lunch with the Whole Wheat Wrap (recipe found on this site) and I'm STUFFED and satisfied. They are delicious and healthy and filling. What more can you ask for?

Easy Salmon Cakes

I think the changes I made messed me up! Too many dry ingredients to wet ingredients= crumbly dry salmon cakes! They still taste ok, but next time I will stick to the recipe. I also didn't have a 14.75 oz can of salmon, but I had two 6 oz cans, so there was a problem from the start. But the taste is good and I would try them again.

Whole Wheat Wraps

These were super easy to make. I ended up baking mine at 350 for about 20 mins, flipping them over a few times. I probably still need to cook them more, or else I should have rolled them thinner bc they're still a bit doughy. But really good! Very hearty and I had all the ingredients on hand. Will make again.

Fruit and Vegetable Pork

WOW! This was great! I halved the recipe, left out the oil and cornstarch and did as another reviewer suggested: threw it all in the crockpot. 2.5-3 hours and done! So easy! So good... I don't like pork chops, but the toppings were great! My boyfriend loved this, said it was one of my best. Thanks!

Baked Custard for Two

I followed this recipe EXACTLY as I had never made custard before. My custards came out runny and tasted like bacon (the could be bc of the custard cups, not sure about that) and I cooked them for almost an hour! The only thing I could think of is that I used skim milk, but the recipe didn't specify what type of milk. I also had too much water in the pan, but dumped some out when I realized my mistake and cooked the cups for an additional 30 minutes. I threw mine away. My boyfriend said his was good BECAUSE it tasted like bacon, so who knows...

Whole Wheat and Honey Pizza Dough

Not so much like pizza dough, but still really good and super easy. I had all the ingredients on hand, so that helped. It was all gone at the end of the meal. I would definately make again (if I had everything on hand).
