About this Cook
I am a nurse in Tennessee. I've been happily married since 1999. No kids yet but we have four cats.
My favorite things to cook
I don't like to spend a lot of effort cooking most of the time. (I'm tired after I get home from work) But I love trying new recipes.
My cooking triumphs
I cooked Thanksgiving dinner for my family and my husbands family for the first time 2007.
My cooking tragedies
When I first started cooking, I made spaghetti with garlic bread. I wound up burning the garlic bread so bad that I had to throw it outside into the snow to put out the flames.

Black Bean and Salsa Soup
My husband and I really loved this recipe. It was very easy to make. I added cayenne pepper, fresh cilantro, lime juice, and more cumin. I also added onion before I pureed this. I also recommend leaving 1/2 of the beans out of the puree, and the sour cream is a must. It was kind of thin for our taste but we crushed tortilla chips and added them in at the end with a little cheese on top.

Eclair Cake
This was very good and so easy to make. I made individual ramekins by crushing the graham crackers into medium sized chunks and layering it into the ramikens as the directions said. They were very pretty and everyone loved them.

Strawberry Pretzel Salad
I made this for work last week, (exactly as it's written) and people are still talking about how wonderful this was.
