Slow Cooker Stuffing

This was really good. I cut the recipe in half and added a box of store bought stuffing. It was done in about 3 hours.

Spicy Beef Vegetable Stew

Reviewed: Nov. 24, 2009
This was really easy to make. I didn't change any of the ingredients, but I did make it in a stockpot instead. I only used one pot for everything. Simmered for about 4 and a half hours.

Super Sausage Gravy

Reviewed: Oct. 26, 2009
Heaven. I took the sausage out before I made the gravy. I don't really like the texture of sausage. I did use a little more milk and two more tlbs of flour to make it stretch. Very good. This will be my new gravy recipe!

Soft Giant Pretzels

Reviewed: Jun. 11, 2009
Very easy and good. I used to be a manager at a pretzel shop years ago and this is how we made them. A few tips... After dipping pretzel in the baking soda/water mixture, place on a dish towel or layer of paper towels to dry the bottom off, this will help prevent the bottoms burning. Also, use parchment paper. Oven should be at 400-415 (parchment paper cannot be used above 420). Turn baking sheet halfway through for even browning. I used tongs to dip the face of the pretzel in a pie plate of melted butter as soon as they came out of the oven. Next time I will try adding raisins to the dough for a breakfast pretzel.

Sooo good. I followed recipe exactly, just added some vanilla to my egg. My toddler ate two and he usually only eats one.

'Day Before Payday' Kielbasa and Corn Hash

Reviewed: May 2, 2009
This was pretty good, something different. My 2 year old ate everything on his plate, so it is for sure worth 5 stars! I used my veggie chopper to chop everything, even the sausage. I used fresh yellow onion and green pepper. Put the potatoes and onions in a big pot first so they could cook longer, chopped green pepper and sausage in the meantime. Added drained can of corn and salt, garlic, and chili powder. Let everything cook covered for 20 minutes, stirring once in a while.

Enchilada Casserole III

This was good. I used canned enchilada sauce instead of dry mix. I put salsa on top of my serving, will add sour cream to the leftovers tomorrow!

Lana's Sweet and Sour Meatballs

Reviewed: Jun. 4, 2008
The meatballs were so good! I made this for my husband because he loves anything with pineapple and he LOVED it. (I'm not a fan of pineapple so I'm going to try the meatballs with BBQ sauce) I made it for 3 so I just used one lb of beef and cut the rest of the ingredients for that in half. There was plenty of sauce and leftovers.

This was the BEST chicken parmesan I have had, ever! I pounded my chicken out before coating to enhance cooking in skillet. Very good recipe. I'm using this recipe for my chicken zucchini sandwiches tonight. yummy.

Fluffy Biscuits

Reviewed: Oct. 28, 2007
The first time I made these I followed the advice of others and added more milk (total of 1 cup). Well, it was too sticky for me to handle so I had to add more flour and I ended up doing drop biscuits instead. They turned out great! So, the second time I wanted to try it without changes. They tasted good but were not as fluffy.

Oven Fried Chicken III

Reviewed: Aug. 28, 2007
Very good, much better than shake n bake. I used 3 boneless chicken breasts, so 1/2 cup mayonnaise went a long way. I probably could have halved the bread crumb mixture as well. I'll keep this one for sure!

Easy Chicken Enchiladas

This recipe is very good and easy. I leave out the beans just because it doesn't appeal to me. I pour a can of enchilada sauce on top then shredded cheese before I stick in the oven.

Downeast Maine Pumpkin Bread

This was a good pumpkin bread. I wanted it to be more dense and not as spicy, so next time I will try something different. I did put applesauce and brown sugar in it as others suggested.

Quick and Easy Fruit Dip

Reviewed: Jul. 30, 2007
This is soooo good!! I used orange juice instead of concentrate, about 1/2 cup I would guess. I used the cream cheese that's already whipped to make it easier to mix. It goes really well with strawberries. I would like to try it as a layer in a chocolate cake, yummy...

Joy's Prizewinning Trifle

Reviewed: May 25, 2007
I have made this twice, once with pound cake and once with angel food cake. I definetly suggest angel food cake. The pound cake was too mushy. I made the pudding first as directed on the box as others suggested. And I also used cheesecake pudding. Before putting the top layer of cream on, I let it sit over night because the desert sinks.
