my mom loves carrot cake so I tried this one, except that I didn't use pineapple and replace the pineapple juice for a 1/4 cup of milk, replaced the sugar for splenda in the cake
used confectioner's sugar in the frosting but was too sweet for me, probably would cut it to 2/3's of the original recipe next time
the cake was a total success
