Black Bean Lasagna I

Apricot Danish Coffee Cake

I made this with fresh apricots. I was wonderful!! Next time I would like to use a chocolate cake mix with strawberries. This is quite the treat!

Apple Sticky Buns

I was not impressed with this recipe. I did not like the texture of the buns. I do not think I will make them again. I did like the yummy topping. That was the only reason it was eaten.

Pasta with Spinach Pesto Sauce

This was fantastic! I did not have shiitake mushrooms, so I just used fresh white mushrooms. It was very simple to put together, and the recipe makes quite a bit. I also used soy bacon for the bacon bits. This one is a keeper!

Nacho Dip II

Apple Walnut Bread

This was a fantastic bread. It was so good, and it did not last a full day in our house. The changes I made were the following: I used spelt flour instead of whole wheat. I used equal parts oil and applesauce. I chopped the apples into chunks and used a heaping cup of walnuts. This is a keeper - so simple and very delicious.

Cinnabun Cookies

What a great cookie!!! I did what was recommended by others. I ued 1 cup of butter for the cookies because I did not have shortening. I refrigerated the dough overnight, and after I spread the filling and rolled the dough back up, I refrigerated it for another hour or so. I did not save any filling to put on the cookies, I used it all for the inside. I baked them at 350 for about 8 minutes. Everybody loved them. They fill the house with the sweet scent of cinnamon and sugar. Great cookie!!

Southwestern Egg Rolls

Since I am vegetarian, I used LightLife "chick" strips instead of chicken. I used fresh spinach, and I did not have a jalapeno, so I left it out. I do not deep fry any food, so I baked these at 450 for 13 minutes - turning them half way through. They were loved by all, even my 2 year old. I will definitely make this many times over.

This is so easy and good. I will definitely keep this in regular rotation. I stuck to the recipe pretty much. I just used homemade sauce instead of jarred sauce.

Best of Everything Veggie Burgers

This is a hearty veggie burger. They tasted really good, but no asked for seconds. This recipe makes a lot. Next time I would freeze the leftovers for later.
