About this Cook
I'm a married mother of a beautiful three year old girl. I'm a full-time mom and part-time student - I'm working on getting my Master's degree in Secondary Education. I'm a Texan at heart but loving living in Hawaii temporarily (that's the military life!).
My favorite things to cook
I love to bake - I love dessert and want some after every meal! I love anything with pumpkin, chocolate, or raisins. I make a lot of cookies and cakes, but I'm trying to branch out and try new things.
My favorite family cooking traditions
My grandparents are Hispanic and I love the wonderful ethnic foods that come out of their kitchen. I've tried to watch closely so that I can learn to cook a more diverse menu.
My cooking triumphs
My mom makes the best chicken fried steak - it's not your normal kind, it's a hispanic version. It's been my favorite meal since I was a kid and it took me a couple of years after I was married before I finally could make it taste as good. When I make it now and it tastes like my mom's, I'm ecstatic!
My cooking tragedies
I cannot cook a pot roast. I've tried everything and no matter what I do or how I cook it or what ingredients I use I never get a good pot roast. Even the slow cooker doesn't work.

Southern Turkey Cornbread Pot Pie
I made this with Jiffy cornbread mix and the cornbread topping may have been a little too sweet. I liked this recipe and it was a great way to use some leftover Thanksgiving turkey. Very easy to make and kid friendly.

Outrageous Chocolate Chip Cookies
I Love chocolate chip cookies and was reluctant to put oatmeal into these but these were outrageously delicious! I like moist chewy cookies so I followed the suggestions of others and switched the amount of sugars (used 1/2 brown, 1/3 white) and the cookies came out soft and perfect. I made it twice - once with smooth peanut butter and once with chunky. Either way, these cookies are great. I shared them with co-workers and they were a huge hit. My only suggestion is the same as many others - double the batch!

Award Winning Soft Chocolate Chip Cookies
What more can I say that hasn't already been said? These are wonderfully delicious, chewy (but not cake like) cookies. I used chocolate pudding mix because it's what I had and they were just awesome. I can't wait to try them with the vanilla pudding.
