Beth's Spicy Oatmeal Raisin Cookies

What an oatmeal cookie should taste like, perfect! Also very easy to mix together. I used golden raisins and regular shortening because that is what I had on hand.

Delicious Ham and Potato Soup

Wow! This will be my standard potato soup recipe from now on. I added more ham, 1.5 cups of milk. I used something called better than bouillon, it is like a paste. I had no issues with saltiness, it was perfect. However a family member claims hers was too salty, and I can only assume it was from the bouillon she used.

World's Best Lasagna

This is the first recipe in 8 years I have had to give a low rating. I followed the recipe exactly. It was too salty and somewhat dry. I can only guess it was the amount of sausage that caused the saltiness. My husband finished his and unfortunately the rest had to be tossed.

Weekend Brunch Casserole

I used half the sausage and that was enough for us. 5 XL eggs. Onions and green peppers cooked with the sausage. It was amazing. I did prebake the rolls 5 min on 375 and had to cook the whole thing about 8 minutes longer since I upped the eggs. It was GREAT!

Slow Cooker Chicken Taco Soup

Outstanding! I cut it in half for my husband and I and still had leftovers. I used butter beans because it was all I had, and it turned out great. I used Bill Echols taco spice and put that much in for half a batch and it was perfect. I would double his spice for the original recipe.

Basic Flaky Pie Crust

I did not have a pastry blender and ended up using my hands after doing some research online. Everything was cold, including my hands, and it turned out spectacular. I rolled it between parchment to prevent sticking. Thanks for the great recipe!

I used dried oregano, 1/4 cup sugar and forgot to add my breadcrumbs, and it was still 5 stars. I doubled the recipe and froze two batches. I will never buy jarred pasta sauce again.

Buffalo Style Chicken Pizza

This was the BEST pizza we have ever made at home, and the same as if not better than the one at our local pizza shop. We used a Mama Marys pre-made crust. I used Ranch because that is what I had, and just painted a thin coating on the pizza to where it looked good. I used only 2 breasts on a large pizza and that was enough IMO. I cooked it in a skillet, let it cool a bit and shredded it by hand. I mixed that in with the butter and hot sauce and spread it on the pizza. My crust called for a 7-10 minute cook time , at about 6 minutes I turned off the oven and turned on the broiler and watched it carefully. We had it on their regular crust ,and again for dinner on a thin style crust, it was that good. As far as cheese goes I don't think I used a full 8 oz. It didn't need it and I was afraid of the pizza getting weighed down. Oil the bottom of your crust. The crust we used held everything perfectly and was crisp. Highly recommend.

World's Best Potato Salad

This was my first time making potato salad. It turned out excellent. I added a little relish to it as well, but not a lot. I didn't have evaporated milk so I used what I had, I'm sure that changed it a little but it was still great. Boiling the potatoes whole really saved time, I had never done that before. I peeled them once they were done and they broke up really easily when cut to give it a real homestyle appearance. My husband declared it was really good, and that he was taking it to work the next day........that is an accomplishment in my house!

Pizza On The Grill II

This was amazing! I used store bought rolled dough and was really surprised how well it rolled out, didn't stick or sink through the grates. I turned it down to low / med-low, and really kept any eye on it, turn it around when one side was browning more. I finished it off under the broiler. This is the only way we will ever make pizza at home again! When my picky kids gobble it down and my husband says this is pretty good, you know you have a winner.

Too Much Chocolate Cake

Outstanding, rave reviews on it. Used mini-chocolate chips. I cooked it in a bundt and a 9 x 13 for 60-75 minutes on 335 for two cakes at once. I also used unsweetened applesauce to replace half of the oil.

Zesty Slow Cooker Chicken Barbecue

It was good just a little dry. I think I will add chicken broth next time. I've made my own variations of this over the years. The taste of the sauce was good, but we just ended up putting our favorite spicy bbq sauce on it. I think I will save this as a winter stand by and stick with marinated chicken on the grill for the summer.

Key West Chicken

This was hands down the best chicken on the grill I have ever made. I marinated about 2 hours. I didn't have lime, so I used the juice of one whole lemon. I doubled everything except the soy sauce. It was just as good the next day shredded and added to a toasted bun with spicy bbq sauce.

Chicken Fried Chicken

Amazing! We made it with a honey mustard sauce from this site. I cut up the thighs and made chicken fingers. Update - This is the new recipe my husband says NOT to lose. I use 4 chicken breasts cut up which fills a chicken fryer sized pan 2x. I add 1 tsp salt, pepper, and garlic powder to the flour. I forgot the potato flakes last time and it was still good. I use 2 eggs and add hot sauce until they turn orange ( ala a paula deen recipe ) and I did just one shake of red pepper flakes. This does not make it spicy, it just gives it some flavor. My breasts are always frozen and cut and cooked when they are partially frozen, they are always really juicy.

Pumpkin Bread IV

This was amazing. I scaled it to make 2 loaves, added more pumpkin than called for because I needed to use it up, and used part whole wheat, white whole wheat, and regular flour. If you use whole wheat a secret is to add a splash of orange juice, they just go together, even though it sounds odd. Even the picky kids liked it. Update: just made it again used a whole 290z can of pumpkin, and doubled the spice or more than doubled. It was great, the husband and kids loved it. I added a cup on whole wheat and you didn't notice it. I made 2 loaves and 12 muffins. The muffins were obviously done and a little more than half the time of the loaves.

Exquisite Pizza Sauce

I was amazed at how easily this came together never having made my own sauce before. I will always do it this way from now on. I mixed a large batch of the spices together , the next time I do that I will be light of the red pepper, I think this batch got a lot or I measured wrong. Very good!
