About this Cook
I love the Rockies and spend as much time up in the mountains as I can. I especially love cooking outdoors. I especially enjoying the dutch oven. Nothing tastes better than just about anything that's been cooking in the dutch oven all day. We also grill year round.
My favorite things to cook
The dutch oven is my favorite method of cooking. Chicken and potatoes is my favorite dutch oven dish. It's simple and the first dish I ever learned how to do but it's delicious. Beef stew, pork chops and fruit cobbler are my other dutch oven favorites. At home I love cooking seafood and fresh veggies
My favorite family cooking traditions
New Years Day we always have crab legs to start the year right. I always make German Chocolate Cake for my husbands birthday. We have the traditional turkey at Thanksgiving and ham at Christmas.
My cooking triumphs
Last summer I created my own sauteed spinach recipe. It's better than any recipes I found. I am quite proud of how good it turned out. That's the most recent triumph I can think of.
My cooking tragedies
I tried homemade Alfredo sauce once. It was like paste. The first time I tried a Thanksgiving dinner on my own it was sort of a disaster but we scrapped together enough to have a nice meal.

Cajun Catfish Supreme
I'm going to look for a Cajun seasoning without salt in it because this was way, way to salty and I think it was the Cajun Shake I used. The soup would also be high in sodium but I don't normally find it to be so salty that I can't eat it. We try to eat low sodium so we may be particularly sensitive to the salt but it was bad, we seriously couldn't finish the dish.

Oatmeal Raisin Cookies IV
The first cookies went all flat and spread out so I added about 1/2 cp flour to the dough. After that they came out much better. They have a better consistency. Once I added that flour the recipe was really good.

Amish Meatloaf
I left out 1 cp of cracker crumbs, it seemed like a bit much. I also used a little less ketchup and sugar. I didn't use the bacon at all. My husband really loved it. I thought it was missing a little something. Next time I'm going to add a little Worchestershire and some Schilling Montreal Steak seasoning.
