Cola Pot Roast I
This is a great alternative to the "standard" pot roast. The cola & spaghetti sauce give it a zippy flavor, and the gravy it makes is excellent! The only modifications I make is that I add diced carrot to the onion, celery & tomatoes mixture, then after browning I cook it in a Crock Pot. Last, I stir in a little flour slurry to thicken the gravy and blend it with a stick blender so it is a smoother texture. This makes a lot of gravy, which is excellent over potatoes. I save the extra gravy and use it over meatloaf later in the week. Excellent pot roast!

Thick Cut-Outs
A great cut-out sugar cookie!! I doubled the vanilla, but that was the only change. When I baked these, I did bake them on parchment paper. They spread out a little bit, but kept their shape very well. The cookies are soft, but still sturdy enough for frosting and decoration. I have searched long & hard for the perfect sugar cookie recipe, and this is it!!

Slow-Cooker Chicken Tortilla Soup
Excellent Soup! I made on the stove-top, and it still turned out amazing. To adjust for stove, I made the following adjustments. 1.) Put chopped onion, green chilis and all spices in a dutch oven with a little veggie oil. Cooked until onions were soft and spices were fragrant. 2.) Added all other ingredients, except I reduced the water by at least a cup of water --- I then brought it to a boil, and reduced to a simmer for 30 min - 1 hour. 3.) I thickened a little with a flour slurry. Honestly, very little effort to make a wonderful dish!
