Oriental Cold Noodle Salad
Yummy salad with lots of zing! I used broken fettucini noodles, and added pea pods. I served it as a side dish to the Thai Fish Cakes found on this website. I will be making this again!

Spinach Chicken Parmesan
I'd give it 5 stars, but my kids didn't like it (too much spinach). This was a SUPER EASY weeknight recipe. I served it with wild rice. For leftovers, I cut up the chicken & mixed it with the rice. The only thing I would add next time is garlic, as suggested earlier. A definite keeper!

Chicken Florentine Casserole
Really rich, yummy chicken dish. Next time I will use fresh spinach (I used frozen & it was way too over powering). I used pre-cooked bacon & cut it up - that was great! Not everyone in my family liked it, but I would make it again.
