Boudreaux's Zydeco Stomp Gumbo

We LOVED this recipe! I made very minor tweaks - I cooked a small chicken and used the broth/chicken for the base. I also used Hillshire Farms turkey kielbasa instead of sausage links, and did not add shrimp because of shellfish allergies. Everything else was the same and it was outstanding.

Ham and Bean Soup

This soup is delicious! I had a ham hock to use up so I cooked the hock and used the broth as the base for the soup instead of water. I used kielbasa instead of bratwurst since it's what I had, but followed the rest of the recipe exactly as it's written. This is a keeper.

Italian Spaghetti Sauce with Meatballs

We LOVED this recipe. Served it to company and they asked for the recipe. Both the meatballs and the sauce were excellent. I made only the slightest variations; I made a triple batch and used 2 pounds of lean (93 percent) ground beef and 1 pound of ground pork. Also, I didn't have bread for fresh crumbs, so I just used seasoned panko. I did cut the bread crumbs in half since I was serving some diabetics who are carb conscious, and the meatballs were still outstanding. Also, I made mine in the crockpot so I didn't saute the garlic and onion ahead of time - I added it fresh in the crockpot and bypassed the olive oil and the sauce was perfect. For Newbie - it's two 28-ounce cans, for a total of 56 ounces.

Party Punch IX

Excellent! I used sugar free gelatin, sugar free ginger ale and Splenda (1 1/2 cups) to lower the calories and it was delicious. Several people asked for the recipe.

Husband's Delight

My husband and I really enjoyed this recipe. He's diabetic, so we used Dreamfields penne pasta (it's pasta that has no impact on blood sugar) and lowfat cream cheese, sour cream and cheddar cheese. I also sauteed the onions with the beef. Even with these lowfat ingredients, it was very tasty.

Herb Roasted Pork

We loved this recipe! My husband and I are watching our sugar and carb levels, so I used Splenda instead of sugar, low sodium soy sauce, and omitted the corn starch. Still tasted fabulous.

Quick and Easy Alfredo Sauce

This recipe got rave reviews at our Christmas dinner table. We are not huge garlic lovers, so I cut the garlic powder in half. I used 2 percent milk, and light cream cheese. It was fabulous - and even better heated up the next day. I will be making this again.

Zesty Slow Cooker Chicken Barbecue

This recipe is easy and delicious! I threw five boneless chicken breasts in the crockpot in the morning, along with the other ingredients, turned it on low, and when we got home from work, dinner was waiting for us. The meat was incredibly tender and the flavor was fabulous. My only change was that I used 1/4 cup of Good Seasons zesty Italian dressing because it's all I had.

Magical Dressing

This was excellent. I served it over a grilled chicken salad with spinach, dried cranberries, pecans, red pepper and carrots. I made two substitutions - I used Splenda instead of brown sugar, and I didn't have lemon pepper so I used the original Mrs. Dash's seasoning. Other than that, I followed the recipe exactly. Yummy.

Horseradish Sauce

We made this horseradish sauce to go with our Christmas prime rib and it was delicious. Everyone raved about it. Very easy to make, too. I followed the recipe exactly, except that I used lowfat (instead of nonfat) sour cream. Definitely a keeper.

Baked Oatmeal I

This was delicious. I always order baked oatmeal at a country restaurant near my home (it's their breakfast specialty) and this recipe was even better than theirs. I did not put the brown sugar on top and it was plenty sweet without it. Also, I used dried cranberries instead of raisins.

Lemon Square Bars

These bars are excellent. The flavor is wonderful and the crust is perfect. The only problem I encountered is that the top of the bars started to get very brown after only 15 minutes in the oven and I fear they would have burned if I hadn't covered them with foil. If you're looking for a terrific lemon bar recipe, this is it.

Dijon Crusted Halibut

Creamy Rice Pudding

Absolutely wonderful! I doubled the recipe and used 2 cups of 1% milk and 1 cup of fat-free half-n-half and it was so rich and creamy. Just delicious.
