It's Chili by George!!

This is a great base for a chili recipe, which can then be altered to your taste. I didn't use any of the sweet ingredients because we don't like sweet mixed in with our food. I make this all the time!

Iced Pumpkin Cookies

These were delicious. The reviewer was right about not putting them in an air tight container. I left them out on the counter. They don't have a long shelf life, so eat them quickily, which isn't a problem because they were delicious!

Mozzarella and Tomato Appetizer

This was beautiful and delicious. I also marinated the mozz balls. I added artichoke and prosciutto to the skewer. I couldn't find the toothpicks, so I used half of a skewer you would use for a kabob. I then stuck them into one large tomato, and decorated the outside of the plate with basil leaves. Will DEFINITELY be making this again!

I don't know what I did wrong, but I found the salad to get kind of watery. Maybe it was the mayo I used or something, but I didn't really love it.

Lemon Lover's Pound Cake

Wow! First of all, this cake was HUGE. I don't know if I added extra of something, but it was gigantic. It was also super moist. I also didn't make the icing. I found the cake was plenty.

Eggplant Parmesan II

I have to say, I had my doubts about baking the eggplant, but it was beyond incredible, and I didn't feel as guilty as when I fry it in all that oil. I did add ricotta cheese tothe mixture because that is how I am used to eating it. It was awesome!

Stracciatella I

This is one of my favorite soups that my grandmother used to make all the time. I took her variations on it though: I omitted the pasta, and I added spinach, carrots and peas. It is a pretty incredible soup and super easy!

Peanut Butter Easter Eggs

These were perfect. However, I did simplify the chocolate coating part by melting the chocolate and a tablespoon of Crisco in the microwave. Once that was melted, I just dipped the eggs in that. It saved me from having to mess with a double boiler, which I don't even have. They cooled very quickly, so be sure to put whatever toppings you want (I used sprinkles) on them right away. I will be making these again next Easter!

Spinach Tomato Tortellini

This was outstanding. I followed the recipe exactly, except that I used more spices than it called for. I added way more parma cheese and a little bit of red pepper flakes because we love those. I may try tossing this with shrimp next time. It was awesome!

Chicken Noodle Casserole

This was outstanding. Living in France, it is very difficult to find condensed cream soups, so I was so pleased that this recipe didn't involve any. It was time consuming to make, so I will save this for a day off when I have time to make it. It was awesome!
