Curried Coconut Chicken

We liked this recipe okay. The thing I liked least about this recipe is how my house reeks of curry! I used the stove fan on high and opened windows and still the smell permeates... And the dish itself did not have a distinct curry flavor. I couldn't taste the coconut milk at all. Kind of a disappointment. Turned out more like a stew with a curry aftertaste. Tasted fine, I'd just try another next time.

Afghans

We didn't like these cookies--very bland. I made them for a couple of children with dairy/egg allergies. I didn't end up giving them to them. They were easy to make and turned out fine, but my husband and I thought they were quite flavorless. And we made them with a bit extra cocoa and some extra sugar. Even with that, they were not chocolately at all, not sweet (and my husband doesn't like things that are too sweet, but he didn't like these), and pretty flavorless.. There's a faint date flavor with a faint chocolate flavor and the chewiness of the corn flakes was not really appealing to my husband. (They're not crunchy--there's just some bites with a chewiness to them.) They could use more cocoa, more sugar, some salt? They aren't even a healthy cookie because of all that shortening. Big disappointment for our particular taste buds.

Zippy Zucchini

I have made this a few times--one time I substituted a different cheese (tasted much better to me with the Parmesan) and one time I intentionally made the zucchini chunkier (so so much better if they're thinly sliced as directed). So I prefer this recipe as is! My preschooler helps me make it, it's so easy.

Nectarine Pie

The flavor of this pie was pretty good, but the appearance (kind of grey) and texture (kind of gloppy) were not as appealing as I'd hoped. I adore nectarines so I was excited to try it, but I'd try a different recipe next time. (I sliced the nectarines as others recommended and otherwise followed the recipe exactly.)

Date Loaf Cake

I loved this cake. I was looking for something healthier and low in fat and this was really yummy. And I'm not even particularly crazy about dates. It was super easy (I bought the dates already chopped) and I agree with the other reviewer--it made the house smell amazing. I will make this again soon!

Chococonut Chip Cookies

These may be my favorite cookies of all time! If you like chocolate and coconut together, I think you'll love this cookie. The ingredients are really fattening (and I make it worse by adding a bit more coconut), but so moist and delicious. I've made them for family members and they still are raving. I sometimes struggle with baking cookies for the right amount of time, but these are difficult to mess up. They taste great a bit underdone and a bit overdone as well.
