About this Cook
I love to cook and bake! In fact, if there were no dishes to wash, I would bake a lot often! I grew-up baking breads with my mom and it inspired my interest in baking and experimenting with foods. I had many favorite recipes and then in 2008, I developed allergies to eggs and milk! To say the least, for a baker, these are the worst allergies! Fortunately, I love to experiment with recipes and I have learned many substitutes for these ingredients and have been able to conquer the challenge of vegan baking!
My favorite things to cook
Love to bake breads such as carrot bread, banana bread and corn bread. My specialty are my special holiday cookies that everyone requests! Every time my father-in-law comes to visit, he almosts expects there will be cookies! He's not afraid to admit it either!
My favorite family cooking traditions
My favorite family cooking traditions are cooking for the holiday! For Thanksgiving, I usually bake all the pies and desserts--however, for the first time, last year I was in charge of cooking turkey. The other favorite tradition, is making tamales with my family for Christmas!
My cooking triumphs
My biggest cooking triumphs are learning how to cook and bake without eggs and milk! I have baked donuts and breads that you woudn't even know are vegan! Although, now I need to focus on making my baking healthy because vegan does not equate healthy.

The Best Steak Marinade
Used this marinade on some skirt steak. I didn't have time to marinade for 2 hours, so it just marinade for like 30 minutes. It came out amazing! My husband kept on asking if I used a store bought marinade or something from the cooking website! He coudn't believe it! This marinade is definitely a keeper and will use over and over!

Grilled Shrimp Scampi
This was the best scampi I have ever had! I doubled the recipe and I followed the recipe as is except for I used half olive oil and half butter. I made the scampi over rice pasta and to dress the pasta, I basically reserved half of the marinade and sauteed the marinade until the garlic was cooked and then I added the cooked pasta into it. Afterwards, I tossed in the grilled shrimp that were still a little under cooked and tossed in the pan, until it all cooked thoroughly. I just topped it with crushed red pepper. Tasted amazing! This recipe will definitely become a staple in my kitchen!

Bacon Chicken II
I made this dish for dinner today and it came out really good! My husband gave it great reviews! However, I did change it up a little after I read a couple of reviews. First of all, I seasoned the chicken with garlic powder and seasoning salt, secondly, I browned the bacon and chicken a little before putting in the oven. Lastly, I put BBQ sauce both on the chicken and above the bacon. It came out great and will definitely be making it again!
