Waffles I

LOWER CALORIE/HALF THE FAT!! These waffles are good BUT...I made changes to improve the nutritional values. First off, there's not a chance that I could eke out 6 servings from this recipe so 382 calories per serving isn't realistic. I use a round belgian waffle maker so it ended up 575 calories per waffle as I was only able to get 4 waffles - that's an astonishing amount of calories for breakfast!! To add to that, there are 32g of fat in this recipe, I reduced it to 14g and they were still fabulous waffles. Instead of 2 eggs I used ½ cup egg substitute and I used skim milk instead of 2% milk as the recipe assumes (per the calorie total). In place of ½ cup of oil I used ¼ cup oil and ¼ cup fat-free vanilla yogurt. I agree with other reviews that the recipe as written is a little bland so instead of 1 tbsp white sugar I used ¼ cup Splenda. I also used 1½ tsp of vanilla and I added 1 tsp butter flavor. Recipe as written (4 servings): 575 calories, 32g fat. Recipe with changes (4 servings): 432 calories, 14g fat.

Apple Cake III

I followed this recipe to the letter...TWICE...and both times it fell. As I was reading the recipe before I made it, it sounded to me like the sugar/flour ratio was going to be thrown off because of all the sugar in the apple pie filling. I was right and it fell. I even made it again to be sure I didn't do anything wrong and it fell again. I will try a third time but instead of using apple pie filling (who needs all those extra calories anyway?), I will use natural applesauce. Ought to be the same results but won't produce a cake that has too much sugar to keep it's loft.

Strawberry Angel Food Dessert

LOWER CALORIE/DIABETIC-FRIENDLY OPTION!! I made this dessert and it was INCREDIBLE!! I used a store-bought sugar-free angel food cake, Marzettis sugar-free strawberry glaze (could've used sugar-free jello to make but ran out of time!), fat-free cream cheese, Splenda in place of sugar (in the cream cheese), and fat-free whipped topping. I served this at a family BBQ and NO ONE was the wiser that I'd made a "healthy" dessert!! Total calories decreased to 75 calories per serving - if you serve 18 like the recipe says. But you'd NEVER serve 18 with this recipe, it's more like 10-12, if even. Calorie count for a more realistic serving made with my changes...right around 160 for a GOOD-SIZED serving!! Last tidbit...don't let the individual taste of sugar-free/fat-free ingredients fool you. I'll just say that the sum of the parts of this recipe come together and are greater than the whole. Definitely a recipe I'll make again and again!!

Jim's Macaroni Salad

LOWER FAT ALTERNATIVE!! This recipe is fantastic but I wanted to make it a little lighter (holy calorie count!). Like others I used half the pasta and to make it more colorful, I used red onion and yellow, orange. and red bell peppers. I omitted the pimiento...texture issue...and hubby doesn't care for black olives - left them out, too. Swapped reduced fat cheddar cheese for american. All that in mind - and having cut the pasta in half - I left all the other quantities the same (to deal with the dry dressing issue). For the 1 cup of mayo I used half light mayo/half non-fat plain greek yogurt. These slight modifications don't do much to change the taste (it's FABULOUS!!) and it's much lighter from the light mayo and greek yogurt. You could also use low-fat/non-fat sour cream with about the same results. Excellent recipe, Jim...Thanks for sharing!!

German Chocolate Bars

OH.MY.GOODNESS! These are SO yummy! I spread out the frosting and the remaining batter on top so tht the bar comes out with a "dry" top so it is easy for mailing. Otherwise the frosting would ooze through which would make them a bit messy for shipping. These are VERY good and VERY easy!

Cheddar Bay Biscuits

Oh my goodness! These are so good they are DANGEROUS! I took the advice of other reviewers and used spices in the butter, turned out fabulous. I also added parsley in the dough, makes them look just like Red Lobster's. Very good, thanks!

Garlic Parmesan Orzo

Based on the previous reviews of this recipe I was looking forward to a tasty pasta side and we were very disappointed. The recipe was bland even though I used more garlic than called for it was just missing something. Maybe fresh parmesan would do the trick, maybe more garlic, maybe the green onions others mentioned are what's missing. This is not a recipe I'll be making again without significant changes.

Delicious Pumpkin Bread

(NOW WITH A LOW-FAT ALTERNATIVE!!) This recipe is GREAT! I have made these several times now with a few modifications that make people come begging for more: I doubled the spices (if not more), used only 2 cups sugar, left out the walnuts and added about 1 cup of semi-sweet chocolate chips. Lastly, instead of making bread, I made muffins...TO DIE FOR!! In standard muffin cups the muffins take about 30 minutes to bake at 350. With these changes, NOW it is a 5-star recipe!! EDITED TO ADD: I decided to try a LOW-FAT version of these and it turned out GREAT! Adding to my previous modifications, I also substituted 1/2 of the oil for applesauce. There was absolutely NO DIFFERENCE in taste or moistness. No brainer, save the calories and fat!!

London Broil

This marinade is distinct and unusual for beef and it is FABULOUS! We grilled on our gas grill and without coals it was hard to tell how long to cook. We cooked for the advised time and the meat was rare, I think 8-9 minutes on both sides would probably be more of a medium. Very good, will definitely make this again!!
