Buttermilk Pancakes II

These are good. The buttermilk is a must. DS who is a pancake aficionado, declared these to be the best I've made yet. We added blueberries to the batter and they were scrumptious.

Cabbage Rolls

These are good! I didn't follow the recipe exactly. The microwave worked very well to steam the cabbage. I loosely covered the head and it turned out very nicely. I didn't sautee the onions in butter, and instead browned about 4 slices of diced bacon before adding the onions. To the ground beef mix I added about 1/4 cup of bread crumbs, 1 TB of mustard and 3 TB of ketchup. I left out the dill because I don't care for it. I also sprinkled salt and pepper over the prepared rolls before pouring the sauce over. I removed the foil after 2 hours of baking, and let it bake uncovered for another 20 minutes.

Bread Machine Pumpernickel Bread

Very nice bread. I did not have any bread flour or vital wheat gluten, and used all-purpose flour instead. The loaf was still very nice. Bread flour would probably have made a more dense and chewy loaf, so for comparison, I will make this again with the correct ingredients next time. I also did not bake the loaf in the bread machine. After the dough had risen, I removed it from the machine, shaped it into an oval loaf and let it rise again. I slashed the top a few times and put it in a 350 oven for 45 minutes. It turned out very nicely.

Semmelknoedel (Bread Dumplings)

Oct 26, 2008: These are great. I sauteed the onions with 3 strips of bacon, diced. Delicious. Update: Nov 13, 2008. I recently made this recipe again as a side dish for my parents 50th wedding anniversary party. We had about 70 guests, 90% of whom were German immigrants. We served these dumplings as a side dish with traditional German rouladen. We got rave reviews, and many requests for the recipe. Thank you! As I mentioned previously, I did add fried bacon to the recipe. I had to multiply the recipe by 8 and made them in 2 batches. I flash froze them on a cookie sheet and then put them in freezer bags until the party. They defrosted wonderfully, and only needed a quick reheating before serving. I still have about 2 dozen left in the freezer, and can't wait to serve them again.

Tofu Lasagna

Very good! A wonderful healthy alternative. We used preseasoned tofu, and doubled the sauce. Will try adding roasted vegetables next time.

Kalter Hund

I actually haven't tried this recipe because I have one from my mother that uses coconut butter instead of dairy butter, and social tea biscuits instead of butter cookies. But there is nothing on earth quite like this dessert. I've had this every Christmas since I was old enough to chew food. My mom still makes about 10 of these every Christmas and gives them away, and everybody always goes crazy for them.

Black Bean and Couscous Salad

This was really good, but you really need to double the lime juice for a little more punch. I kept sampling and adding more juice until it was right. Very nice recipe. Pretty salad to look at, and great flavor.

Slow Cooker Stuffing

This was passable, but certainly not 5 star in my opinion. We added the neck from the turkey, hoping to get more turkey flavor into the stuffing, but it was still a little bland, and the texture was too mushy for my liking.

Praline Sweet Potatoes

This was a hit. I reduced the white sugar by 1/2, but quite frankly, I could have eliminated it all together. I left out the vanilla too. We had so many compliments on this dish. Will definitely make it again.
