Scallops with Roasted Garlic Cream Sauce

Reviewed: Sep. 2, 2009
Nice recipe but 3 minutes per side for scallops is way too long! Scallops will cook in half that time or less.

Beef Tenderloin With Roasted Shallots

This was fantastic! I used a 10-yr old port and loved the results. Combine with a side of asparagus for a great meal.

Creole Seasoning Blend

Very good and thanks to other reviewers for suggesting this mix as a holiday gift. My bride has never enjoyed any of the store bought Creole mixes, but loved this combination. Very well done!

Vegetarian Shepherd's Pie II

Yum, Yum, Yum. I'm a real meat eater but this dish just made it into our weekly rotation. It is fabulous. Like others, I added some butter to the mashed spuds to flavor it up and used home made chicken broth to really bump up the flavor. I love this dish and would serve it to company without hesitation.

Romantic Chicken with Artichokes and Mushrooms

Reviewed: Mar. 5, 2009
Wow! This is wonderful. I made it for my bride for our Pre-Valentines Day Dinner and she loved it! I used Black and Green Olives and doubled the mushrooms. I also use the quartered, marinated artichokes that come in small glass jars because I had them. I prefer them because their marinade is mostly olive oil. If you like olives, artichokes and mushrooms, this dish is a must try!

Authentic, No Shortcuts, Louisiana Red Beans and Rice

Reviewed: Feb. 25, 2009
Very Good! I followed others suggestions and used 7 cups of chicken broth (home made) instead of 10 cups water. As I'm not crazy about the Creole seasoning I have found in stores, I made my own using a recipe I found on this site. I also doubled the amount. Next time I may triple it. Also added cellery and used Pasqual peppers instead of green bells to spice it up a bit. Next time I plan to add some prawns as well.

Feta Cheese Turkey Burgers

Reviewed: Aug. 19, 2005
Good Lord Almight! These burgers are fantastic! After blending the ingredients, I let them set up in the fridge for about 1 hour before forming patties. Grilling was no problem after brushing the grill with a generous layer of olive oil. Forget the bun -- these burgers don't need it. Instead top with a layer of steamed spinich and serve with Sweet potato french fries. Visually stunning and absolutely delicious!!

Cholay (Curried Chickpeas)

Reviewed: Aug. 19, 2005
Good start but a tad bland for may taste. Perhaps some curry paste or doubling the spice quantities. As others have mentioned, this is a rather involved recipe that requires numerous bowls, pans and pots. If you don't have a dishwasher or teenage kids, pass on this recipe.

Wow! This is great! My wife, daughter and I whipped this up in no time and loved it. This basic recipe lends itself to user modifications very well. Keep on cookin', Good-lookin'! This is FatDad, in the Kitchen.
