Dawn's Easy Red Velvet Sandwich Cookies
Bread Pudding ( recipe by Mien)
Bread Pudding by Mien
About this Cook
I feel calm and content when cooking for pleasure but haven't mastered not being stressed when making a lot of dishes at the same time for a crowd.
My favorite things to cook
I love baking and making comfort food. I love to make anything that I know will be good, which means too much butter and cream,...not so good! Being comfortable with techniques allows me freedom to be creative with recipes.
My favorite family cooking traditions
My son is a fine dining chef, my daughter is a very accomplished vegan cook. I love to share special family time coking together in the kitchen. At the holidays, by request, Eggs Portugal, and Broccoli cheese casserole are mandatory.
My cooking triumphs
Everyone loves my meatloaf, beef stroganoff, bread pudding, pecan brittle, and homeade soups, especially Ham hocks and Lima bean and Portugese Bean Soup. Whenever I make it I have to make at least 3X or 4X more.
My cooking tragedies
Toffee, butter separated (learned not to stir and that the temperature must be constant, I removed the pot from the stove and decided it should cook more so I put it back.) Toffee saltine cookies, burned the sugar mix. (it was still good so we ate them anyway!) Now I rely on a candy thermometer.

Cabbage Rolls II
I steamed the cabbage in my electric steamer, best way ever to remove cabbage leaves, it keeps them intact and preserves nutrients. I added fresh minced garlic and more worcestershire. I use low/no sodium tomato sauce and leave out the salt (dietary restriction) . Next time will use 1/2 sausage to give it more flavor, will also use less rice. 1 1/2 T - 2 1/2 T. meat added to each cabbage piece depending on the size of the leaf. Overall, delicious, easy to make.

Cream Cheese Blueberry Pie
!st attempt at Blueberry pie, it was wonderful. This is not overly sweet, esp. the cream cheese mix. I used a shortbread crust- made in food processor (took about 5 min) Crust was so good - I could eat it plain! This recipe topped it off. I wasn't sure how long to cook the blueberry filling and cooked a bit too long. Cook just until it is still a little runny or it will be stiff & gooey. Not a difficult recipe at all

Brown Sugar Meatloaf
Been making for 6 yrs. Always well loved and often requested. I sometimes use onion soup mix and add worcestshire to give it more flavor. Sometimes add brown mustard also. I add ketchup w/ worcestshire to top also
