I am a mother of two little boys. One is three and the other is a year and a half. They keep me busy, so I don't have much time to cook. They do like to help in the kitchen though!
My favorite things to cook
I love Italian food, bread, and desserts of all kinds. I enjoy challenging foods like pies. I also decorate cakes, so I bake a lot of them.
My favorite family cooking traditions
Every Christmas my mom makes Christmas candy. Although Christmas is a very busy time of year for me, I have tried to carry on the tradition. My husband's favorite are date balls.
My cooking triumphs
I have baked and decorated four wedding cakes. My last two were four tiered fondant cakes and they turned out really beautiful.
My cooking tragedies
Once I was baking a wedding cake. It was midnight before it was finished baking. I had to shell 18 eggs for this cake. It was huge. I tried to lift it out of the oven and it slipped out of my hands.

Chocolate Orange Fondue
This was very tasty. The flavor reminds me of the chocolate oranges you buy around Christmas time. I used semi-sweet chocolate chips instead of the dark chocolate, and I substituted orange extract for orange liqueur. We dipped strawberries, raspberries, mandarin orange slices, graham crackers, and marshmallows. Wonderful!

Avocado, Tomato and Mango Salsa
This was excellent. I used hot sauce instead of a jalapeno because I don't like them. Other than that, I did the recipe as is. It was a little bit soupy at the bottom, but the flavor was to die for. We used it in some fajitas we made for dinner and it was fabulous. We will be making this again.

Sour Cream Pork Chops
This recipe was very tasty. I did everything just as it was written and the meat was moist and tender. For people who like tender marbled meat, this dish will be heavenly.
