Eggplant Parmesan II
This was very delicious. I was given a beautiful, large eggplant from my neighbor's garden. It was fresh, firm and had few seeds. This one eggplant was enough to fill the casseole. It was wonderful. Next year I growing some eggplant!

Fresh Tomato Pie
Great recipe! Took the advice of previous reviews and cooked (nuked) the onions briefly before placing into the pie crust. Also drained the sliced tomatoes on several layers of paper towel while I was making the crust. Very good. Family wants it again... soon!

Fried Zucchini
My family has grown to really like this recipe. Remember to let the mixture sit for 30 minutes so the batter forms on the vegetables, as Jon suggests. We did increase the garlic powder and the salt.
