BBQ Pork for Sandwiches

Wow! Was this good and super simple. I loved the taste that came from baking it in the oven. I think baking it causes the sugars in the sauce to caramlize? I did bake mine a bit hotter (400 degrees). I also used a pork butt roast, which was pretty fatty, but was able to pick out much of it before baking it. I used Annie's BBQ sauce which I think are wonderful.

Delicious Gluten-Free Pancakes

Wow! Was this good. The pancakes are so light and fluffy, not heavy and gritty like some of the mixes I've tried. I used Authentic Foods' Brown Rice flour rather then the white rice flour. I also, based on other reviewers suggestions, substituted 1.5 cups milk mixed with 2 Tbsp. vinegar for the 4 tbs. dry buttermilk and 2 cups water. I think reducing the liquid as well made it just the right consistency. I look forward to trying it with the buttermilk powder (or maybe even real buttermilk-what a treat), just didn't have any on hand. Thank you for a wonderful recipe that celiacs as well as non-celiacs can enjoy. Oh! And they tasted just as good warmed up in the microwave the next day.

Black Bean Brownies

Thank you for a gluten-free recipe for brownies that doesn't call for an expensive assortment of exotic flours. Sure its not like traditional brownies in texture, but putting that aside, these brownies are so rich and chocolatey... And the added fiber and protein are a bonus. I've made it several times and I've done what other people have suggested such as adding baking powder and walnuts. I whip the whole thing up in my food processor and make sure to puree the beans real good first before I add everything else. This recipe never fails to impress me, its like a chocolate miracle.

Pasta with Tomatoes and White Beans

So easy and so good! I did what other reviewers suggested and sauteed some diced onions (about 1 cup) and minced garlic (1 large clove) in about a teaspoon or more of olive oil, to which I added the tomatoes, etc. too. I also used frozen spinach versus the fresh. I couldn't believe how good it was for how little work it took.

Cranberry Orange Loaf

Yummy! I did what other reviewers suggested and chopped up the cranberries before adding. I also used butter instead of margarine. The only complaint I have is that it didn't hold up well when slicing. But that won't stop me from making it again!

Shepherd's Pie

As per other reviewer's suggestions, I added 1/2 onion, 1 clove of garlic and some Italian seasoning to the meat as well as some Worchester sauce. I also left out the can of celery soup and used frozen vegetables. The meat mixture tasted great, but unfortunately was buried under an inordinate amount of mashed potatoes. I literally had to search out the meat from underneath the potatoes. As a result, I would suggest lessening the amount of potatoes or increasing the meat mixture. In the end though, it’s hardly the same recipe after all the changes I made so I don’t think it fair to give it too low of a rating. Besides, if I had been more aware of disproportion of mashed potatoes versus the amount of meat mixture I may have held back on the potatoes and it could have turned out pretty yummy after all... I'm going to keep looking for other Shepherd's Pie recipes...

Bodacious Broccoli Salad

This broccoli salad is so good! I used half the amount of pepper and half the amount of red onion the recipe calls for and I substitute turkey bacon for regular bacon to save on the amount of fat. I also use lite mayo but not the fat free stuff. I've tried it with lite miracle whip and wasn't as good.

Mexican Bean Salad

I made this for a potluck, doubled the recipe, approx. 50 people came and there was plenty left over. I got a ton of compliments on it. Maybe a little too sweet for me, I think next time I'll reduce the amount of sugar... great recipe though!

Marinated Tuna Steak

This is my first time ever cooking Tuna steaks (usually I settle for the stuff in the can)and I must say it was better then I expected. I went with other reviewer's suggestions to marinate longer and let it marinate overnight. It was moist and oh so good... Thanks so much for Carin the great recipe!

Cheater Pot Pie

This recipe was an instant favorite with my entire family. So quick and simple. Unfortunatly, the biscuits tend not to cook all the way through so I started using Hungry Jack, flacky biscuts because they're easy to pull apart to create a thin top layer. I ecspecially liked the Hungry Jack honey butter biscuits with this recipe!
