Garlic Parmesan Orange Roughy
This was an awesome topping for fish! I used Flounder rather than Orange Roughy and used spray butter to cut the calories and it was delicous! For the dijon/mayo spread I used 1/8 cup of dijon and an 1/8 cup of fat free mayo to come to the 1/4 cup the recipe calls for. Will definatley make again!

Mushroom Blue Cheese Turkey Burgers
These were very yummy and suprisingly incredibly moist. I steamed the onions a bit before mixing with the meat just so they definaley wouldn't be crunchy when you bit into the burger. I also made them on the stove rather than the grill and added some garlic, Montreal Steak seasoning and mixed a bit of the bleu cheese crumbles into the meat as well as melting some on top. I made these for dinner last night and froze the patties that I didn't heat up and my husband is already asking when we're going to have them for dinner!! And he's typically a beef eater! Yum!!

Chicken Claridge Stew
Very Good!! Made once and followed the recipe - would give it 4 stars that way. Made some adjustments and turned it into 5! Added a can of cream of celery, fresh mushrooms, corn and peas too!! Bumped the cup of chicken broth up to a can and omitted the tomatoes. Added some Italian seasonings and garlic and herb Mrs. Dash!! mmmmm....
